Healthier No-Bake Carrot Cake Recipe
Ingredients
2 grated carrots
5 dates soaked in hot water
1 cup buckwheat flour
1 cup shredded coconut
1/2 cup roasted almonds
2 tsp cinnamon
¼ tsp nutmeg
¼ tsp ground ginger
1 tsp vanilla extract
Dash of almond milk
Pinch of salt
Frosting
1 cup raw cashews soaked in hot water
1 tsp vanilla extract
1 tbsp tahini
3 dates soaked in hot water
⅓ cup of almond milk
Instructions
Place all dry carrot cake ingredients into a food processor. Process until finely ground.
Add wet ingredients and process until smooth.
Do the same for frosting ingredients
